Mahi Mahi fillets
Mahi Mahi has a sweet, mildly pronounced flavour similar to swordfish. The lean meat is fairly firm in texture, though not steak-like, and it has large, moist flakes. The raw flesh is pinkish to greyish-white, though dark along the lateral line.

Mahi Mahi should be cooked to around 137 degrees F. Be sure as to not overcook it – as it will dry out quickly.
